This is a good way to use leftover pork loin.

Mojo:
1 med clove garlic
1/2 t Kosher salt
1 T olive oil
1 T fresh lime juice
1 T chopped fresh cilantro

Sandwich:
4 oval-shaped sandwich rolls, split
3 T whole grain mustard
6 oz thinly sliced roasted pork loin
1/4 pound thinly sliced ham
4 slices Swiss Cheese
2 large dill pickles, thinly sliced
2 T butter, softened

Peel and mince the garlic. Sprinkle with salt and mash to make a paste. Transfer to a small bowl and mix in olive oil, lime juice and cilantro and set aside.

Brush the interior of the rolls with the Mojo and the mustard. Then stack the bottom four rolls with equal amounts of pork, ham, cheese and pickles. Top each sandwich with top roll. Spread butter on the top and bottom of each sandwich.

Set sandwiches in pre-heated pan. Put a flat lid over sandwiches and weigh down with a couple of heavy cans. The idea is to flatten the sandwich. Cook until the tops are brown (about 4 minutes. Flip and weight down again. Cook for about 4 minutes more.

I have a Cuisnart Griddler so I leave off the butter and press it down in there. Works great.
