CHOCOLATE PEANUT BUTTER BARS

I've posted this recipe before, but I think it's been awhile. So, here it is for the newbies out there!

These are very good; I cut them into 1-inch squares, so it makes a lot. The top layer ends up soft but holds up, while the oatmeal crust layer is a little bit chewy. It's a cross between cookie and candy! I always get asked for this recipe!

CHOCOLATE PEANUT BUTTER BARS

½ cup butter

1 cup brown sugar

½ cup corn syrup

1 Tbsp. Vanilla

4 cups oats

12 oz. Chocolate chips (semi-sweet)

1 ½ cups peanut butter

Pre-heat oven at 350. Line a 9 x 13 pan with parchment paper and spray with cooking spray.

In mixer, blend butter, sugar, vanilla and corn syrup. Add oats. Pat into baking pan and bake in oven about 15 minutes.

Meanwhile, melt chocolate chips and peanut butter (do not heat too hot). Cool bars for a few minutes after removing from oven, until they feel firm, then pour chocolate/peanut butter mixture over crust.

Chill overnight. Cut into squares and serve at room temperature. ENJOY!
