CHILI CHEESE CORN (side dish)

This isn't a diet-conscious dish but people you serve it to probably will ask for the recipe.  I'm fixing another type of corn casserole tonight and almost forgot about this recipe I've had for a long time.

CHILI CHEESE CORN--6 servings

 

1 package (8 oz.) cream cheese, cubed

2 tablespoons butter

4 cups fresh or frozen corn, thawed

1 can (4 oz.) chopped green chilies

1/4 cup milk

1/4 teaspoon garlic salt

1/8 teaspoon salt

1/8 teaspoon cayenne pepper

 

In large saucepan, combine cream cheese and butter.

Cook and stir over medium heat for 4-5 minutes or until smooth.

Stir in the remaining ingredients.

Cook for 5 minutes or until heated through.

Serve with a slotted spoon.

Sounds like it would be great with barbecue and some big, juicy sliced tomatoes.

Recipe sounds wonderful. It's easy and indulgent - perfect feel good dish, on a dreary day or when it's been a rough one.  Thanks for posting.

DH loves any type of "creamed corn," (and so did my dad); this will be a big hit and, though I, myself, don't like the canned variety, this looks tasty and delicious. So, of course, I copied it lol.
