Here are a couple of ideas for Chicken Breasts that are super easy and delicious.

Seattle space needle chicken breast:

chicken breast (approx 4 ozs)

1 tsp butter

1 tbsp half and half--------------

preheat oven to 350. Take a sheet of aluminum foil large enough to easily fold around the chicken breast; make a slight well in the middle of the foil, lifting up the sides. Put chicken breast in center of foil, top with butter and carefully with half and half.

Fold the foil around the chicken breast, securely.

Bake for 60 min; if desired, open the foil the last 10 min to increase browning.

1 chicken breast, approx 4 ozs

Approx 2 tbps sweet chile sauce (Trader Joe's makes a very good one, so, too, is Frank's red hot chili sauce) Frank's is not really red hot, just has a great piquancy, delicious!

Wrap in aluminum foil and bake, following same directions, as above.

If you choose, reserve the juice to lightly drizzle over chicken breast, but with or without the juice, you'll get a wonderfully flavorful breast.

One of our favorite meals, from the Dietician's Kitchen, is to serve these breasts with steamed asparagus, lightly drizzled with hollandaise or cheese sauce, and fresh pineapple.

Wonderfully flavorful and healthy meal, that's also very simple.
