This is a really quick and relatively healthy soup. Good for when you are crazy busy around the holidays!
1 t oil
2/3 cup chopped onion
2/3 cup chopped red bell pepper
2 t minced garlic
1 t ground cumin
2-1/2 chicken broth
1 can (15 oz) pumpkin puree
1 can black beans, rinsed
1 can diced tomatoes, drained
Salt and pepper to taste
Coat a large saucepan with oil. Heat over medium heat. Add onion and bell pepper, saute about 5 minutes until tender. Stir in garlic and cumin. Cook 1 minute. Stir in broth, pumpkin, beans, tomatoes, salt and pepper. Bring to a boil. Reduce heat, cover and simmer 5 minutes to blend flavors.
Top bowls with a dollop of sour cream or plain Greek yogart and chopped cliantro.
I use a little more cumin than called for but it is a matter of what you like.
