CANNOLI POKE CAKE....(just inserted a picture of it)

CANNOLI POKE CAKE

 

  • 1 box white cake mix (+ ingredients on box)
  • 14 oz can sweetened condCannoli_Poke_Cake5.jpgensed milk
  • 1½ cup ricotta cheese
  • 1½ cup mascarpone cheese (*cream cheese can be substituted)
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • ½ teaspoon cinnamon
  • ½ cup (or so) mini chocolate chips
  • powdered sugar for dusting

 

 

  1. Prepare and bake a 9 x 13 cake according to the directions on the box.
  2. Let the cake cool completely then poke holes all over the top of the cake. (Use a straw or handle of a wooden spoon)
  3. Reserve ½ cup of the sweetened condensed milk and set aside.
  4. Pour the remaining sweetened condensed milk over the entire cake. Let it soak in for about an hour in the fridge.
  5. Meanwhile, in a large bowl, add the ricotta cheese, mascarpone cheese, and vanilla extract and beat until smooth.
  6. Add in the powdered sugar and cinnamon and mix until combined.
  7. Add in the reserved ½ cup of sweetened condensed milk and mix well.
  8. After the cake has absorbed all the milk, spread the cannoli topping evenly over the top.
  9. Sprinkle on the mini chocolate chips.  Refrigerate cake a few hours before serving.  Just before serving, dust with some powdered sugar.  (Refrigerate any leftovers)

Weight Watcher approved?  I seriously doubt it but it surely sounds good.

OMG, I never saw a recipe for this before!

 

Our lifelong friend and daughter's godfather is Italian.  He would love this cake, thank you for sharing it!
