These are great for an edible garnish on anything lemon.

 

1 cup sugar

2 T fresh lemon juice

3/4 cup water
2 small lemons, thinly sliced

 

Line a jelly-roll pan with wax paper or parchment paper.  Stir together first 3 ingredients in a large skillet over medium heat until the sugar dissolves.  Add the lemon slices in a single layer.  Simmer gently turning occasionally for about 15 minutes until rinds are soft.  Remove from heat.  Place in single layer in pan.  Cool completely.  Cover and chill 2 hours.  Reserve the syrup for another use.  Makes 8 to 10 slices.

 

Try to get the smallest lemons you can.  If you use larger lemons you get holes turning them.

would work well with limes also......thanks!

this also sounds good for a garnish for cocktails.

Good idea.  I never thought of using limes.  Sometimes it is hard to find small lemons.

Does sound good!!  My mom used to candy orange and grapefruit slices during the holidays.  Used them as garnish on different flavored holiday cakes....
