This recipe was in a throw away paper I got yesterday. I happened to have bacon in the house which is unusual for me so I gave it a try. It is a little different from the one I usually use as it has curry in it.

7 to 8 pieces bacon, preferably applewood smoked
2 packed T light brown sugar
1 t curry powder (I used madras)
1/2 t ground cinnamon
freshly ground black pepper
cayenne pepper (optional)

Preheat oven 400.

Line cookie sheet with foil. Place rack on top and arrange bacon slices in a single layer.

Mix brown sugar, curry powder, cinnamon together. Sprinkle liberally and evenly over bacon. Add pepper and cayenne if using.

Bake bacon until it is crisp and glazed (start checking at 10 minutes). Left the bacon cool about 2 minutes and then transfer to paper towel to drain.

I like crisp bacon so this took abouit 20 minutes in my oven. Also depends on how thick bacon is.
