I have not been able to sleep, I have a lot on my mind, so cooking always makes me feel better
. Thought I would share a recipe that I am cooking right now.
6 center cut boneless or bone in pork chops or loin
mustard
seasoned flour (flour with onion powder, garlic powder, seasoned salt, whatever you like)
2 cans chicken and rice soup
scant amount of cooking oil
Spread mustard on both sides of chops, dredge in flour, quick fry in oil until lightly browned on both sides (don't cook the meat, just brown), take chops out of oil and discard oil, if any is left, and then put chops back in pan and pour soup over chops, cover and cook until chops are cooked and tender. Be careful not to over cook the pork. Make sure you cook on low.
I know this may sound like a strange recipe-but it is really very good, and the meat will be so moist and tender.
I actually browned 9 1" cut pork loins in my WP versacooker, and then put on slow cooker mode on high for 4 hours. Now that I have learned to use it well, I just love this cooker. The funny part is, that I live alone and have cooked this amount!!! I am trying to find a home for a dog that someone threw out, and I cook for him all the time, and I am trying to make him user friendly, so I am sure he will have no problem helping me eat this much
Sorry to ramble, just a lot on my mind, I do wish doctors would give good news sometimes......Enough about that.........Just have no one to talk to, so my words just type out!!!! Just thought I would share a recipe, that have been making since a girl.
