I have made this cake many times and it is very good and so moist. The recipe is courtesy of Taste of the South.

Butterscotch Apple Cake

2 eggs

1 cup vegetable oil

1 tsp vanilla

2 cups all-purpose flour

2 cups sugar

1-1/2 tsps baking powder

1 tsp salt

1 tsp baking soda

1 tsp ground cinnamon

3 medium Granny Smith apples, peeled and chopped (3 cups)

1 cup chopped pecans

1 cup butterscotch chips

Preheat oven to 350.

In a large bowl mix together oil and sugar; add eggs one at a time, beating after each addition. Add flour, baking soda, cinnamon, baking powder and salt; beat well. Stir in apples, vanilla and pecans. This mixture is going to be thick.

Spread mixture evenly in a greased 9x13 baking dish. Sprinkle butterscotch chips over top. Bake for 55-60 minutes. Cool completely in pan.

Top with a little warmed caramel sauce and whipped cream if desired!
