Broccoli Salad
7 or more slices of bacon, cooked crisp and crumbled (I cook in oven)
1 large bunch of broccoli, cut into bite size pieces (1 ½ - 2 lbs)
1/4 cup finely chopped red onion or about 4-5 green onions (or less)
½ -1 cup cheddar cheese, grated or sometimes I cut into tiny cubes
1/2 cup golden raisins
2 tablespoons red or white wine vinegar
2-3 T sugar
2/3- 1 cup mayo depending on how much broccoli I use
1 T fresh lemon juice -optional
salt and pepper to taste
½ -3/4 cup sunflower seeds
½ cup sliced almonds, toasted or add some salted cashews
Combine broccoli, onion, cheese and raisins in a large bowl. In a small bowl, whisk together vinegar, sugar, mayo, lemon juice, salt and pepper. Pour over broccoli mixture and mix well. Chill for at least 2 hours. Toss in sunflower seeds nuts and bacon before serving.
