Adding water chestnuts to these recipes, give you some crunch.

When you lose some one you L~O~V~E, that Memory of them, becomes a TREASURE.

I've become a big fan of adding slivered or sliced toasted almonds to almost anything that is casserole-like.  Some types of salad, too.

 

For dinner tonight, we're having leftover rice and chicken casserole containing celery, onion, mushrooms, frozen peas and almonds.  I do use canned cream of chicken, mushroom, celery or onion soups--often mixed with sour cream-- in many  casseroles.  It's my favorite shortcut instead of mixing up some sort of sauce myself.

 

I usually cook rice in chicken broth or stock, rather than water, and think it adds richness to any rice dish.

 

I'd try adding the almonds to the broccoli casserole and top the casserole near the end of baking with some canned crispy fried onions (which can burn too  much if added during the initial time in the oven).

 

Recently added slivered almonds while mixing up a cold chicken salad and really liked the additional flavor and crunch.
