Broccoli, Cheese & Rice Casserole

In watching yesterday's TSV that featured sides, the Broccoli, Rice & cheese Casserole looked so good.  Anyone have a tried and true recipe for this casserole.  I've looked on line and most have canned soup and processed cheese.  If this is how it's made, so be it, but if not, maybe you can share your recipe.

@coffee drinker  I found one on site spendwithpennies.com. I've never made it but it sounds good and all from scratch.

I found this one from Skinnytaste online.  You can omit the chicken and use instant rice instead if you wish.

 

Skillet Cheesy Chicken and Veggie "Rice" made with riced broccoli and cauliflower, sauteed chicken and cheddar cheese. It's so fast and easy to make!

INGREDIENTS

  • 1/2 lb boneless, skinless chicken breast, cubed small
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon garlic powder
  • black pepper, to taste
  • 1 teaspoons olive oil
  • 2 cloves crushed garlic
  • 1/4 cup chopped onion
  • 12 ounces riced cauliflower and broccoli, 
  • 1/3 cup reduced fat sharp cheddar
 

INSTRUCTIONS

 
  • Season chicken with 1/4 teaspoon kosher salt, garlic powder and black pepper, to taste.
  • Heat a large nonstick skillet over high heat. When hot add 1/2 teaspoon oil and add half of the chicken.
  • Cook 2 to 3 minutes on each side, until no longer pink in the center and browned on the edges. Set aside.
  • Repeat with remaining chicken.
  • Add the remaining 1/2 teaspoon of oil, onion and garlic and cook over medium heat about 2 minutes, until soft. Add the riced vegetables (frozen), 1/4 teaspoon salt and pepper and cook 5 to 6 minutes, until heated through.
  • Return the chicken to the skillet, top with the cheese and cover.
  • Cook low heat until the cheese is melted, about 2 to 3 minutes.

Oy!  Here's how I make it:  steam in bag broccoli, minute rice and shredded colby cheese. .Throw it all together(after steaming the broccoli and cooking the rice) in a baking dish and put it in the oven - 350 for around 15 minutes.  I don't do anything with millions of ingredients.  I wouldn't know how and I'd be bored to tears. Hate to cook.

I like a bit of richness and chunky broccoli:

 

2 lbs broccoli florets, cut into 1" pieces

2 tbsp butter

1 onion, chopped

1 1/4 cups white rice

4 cups chicken broth

1 1/4 cups half-and-half

1 tsp salt

2 cups shredded sharp cheddar

1/2 cup grated Parmesan

 

Microwave broccoli in big, covered bowl until bright green, 2-3 minutes. 

Melt butter in big pot and stir in onions until softened.  Stir in rice for 1 minute. 

Stir in broth, half-and-half, and salt.  Bring to a boil.  Stir over medium-low heat until rice is tender, 20-25 minutes.

Take off heat and stir in cheeses and broccoli. 

Pour into greased 9X13" baking dish and bake at 400 degrees for 15 minutes.  Let cool for 5 minutes.

@deepwaterdotter Thanks for this recipe. I am always looking for one that uses regular rice. I don't like instant rice. This one sounds so good.

QVC posters come up with the best recipes! My husband was asking what I will serve with some thick sliced turkey breast I bought. I shrugged and said Kraft mac & cheese. No way! Now I'm making broccoli, cheese and rice casserole. Thanks.
