Breakfast Puffins

I've gotten so bored with the basic breakfast and brunch ideas so when I came across these I jumped for joy. It's a little twist on the traditional breakfast sandwich. These are truly SO good! We had some guests stay with us this weekend and I made these this morning for brunch with a fruit salad, juice and coffee. Everything disappeared! I hope that you'll try them.

Ingredients:
2 sheets Puff Pastry (thawed)
12 eggs, beaten
1 cup cooked and crumbled bacon (drained)
1/4 cup milk
salt and pepper to taste
3/4 cup shredded Colby-Jack cheese
9 slices ham OR Canadian bacon

Sauce:
4 oz Velveeta (or your favorite cheese)
1/8 cup milk

Instructions:

1. Cut each Puff Pastry sheet into 9 equal squares for a total of 18 squares and align on 2 parchment-lined cookie sheets.

2. Bake Puff Pastry squares at 400 degrees F for about 12-15 minutes or until they are golden brown in color. Leave on cookie sheets and let cool for about 10 minutes.

3. In a large skillet, combine beaten eggs, crumbled bacon and milk. Cook scrambled eggs to your liking and in the last 10 to 15 seconds add the shredded Colby Jack cheese and let melt.

4. As best you can, divide eggs into 9 equal portions placing the mixture onto the flat side of the Puff Pastry square. Continue topping each of the 9 egg covered squares with a slice of Canadian bacon or ham (fold as needed). Place the other half of the Pastry on top of the puffin.

5. To make the cheese sauce, combine Velveeta (or your favorite shreeded cheese) and milk in a small microwave size bowl and heat in 20 second intervals, stirring at each interval until melted smoothly together.

6. Top each puffin with some drizzled cheese sauce and some freshly ground pepper. Return to oven for 3 to 5 minutes to heat thoroughly and enjoy.
