When my son was young and my then husband travelled for business, we would on occasion have "breakfast supper" as my son coined it.  Usually bacon, eggs, hashbrowns and toasted bagels or English muffins.  Sometimes pancakes or Belgian waffles instead of the hashbrowns.  And of course chocolate milk and something sweet (lke homemade brownies, cookies or fruit) for dessert.

 I still will occasionally make breakfast supper for myself now that I am cooking for one.  Easy to put together when I get tired of the usual chicken or fish and salad and veggies.
