@timeless - I grew up with this practice! We had it once a week. My favorite was Mom's waffles with bacon pressed inside. We lived in Georgia, and it wasn't easy to find scrapple there, but when my aunt and uncle came down they always brought scrapple, and it was a treat. Mom froze it, so we had eggs, scrapple, applesauce, and toast.
I tried this when my children were growing up. They liked French toast, Eggs Benedict, and quiche. But then evenings got busy and we ate at different times. ![]()

I have never been the habit of having breakfast for dinner.
I am not a breakfast eater...I skip it.
I am also gluten free... so no toast, pancakes, French toast, cereal or muffins.
I have though, if in a hurry, or have to make dinner late at night for some reason, have made an omelette with cheese, onions, peppers, broccoli, ham or whatever I had on hand.
My husband will eat this. If I served him pancakes, he would not be happy.

Frittatas. Perfect for using anything you have in the frig. Veggies need to be used up, Frittata. Throw in any meat I have on hand, bacon, sausage, ham.

Either scrambled eggs & whole wheat toast or an omelette that includes bacon pieces, small ham cubes, small potato cubes, onion and cheese.

Breakfast food for dinner has always been a favorite in this house. My husband loved meat, eggs, potatoes with toast and jelly. The girls preferred meat and waffles. My favorite is sausage gravy, biscuits and fried apples, or meat with french toast, which made everyone happy.
About 12 years ago, an odd situation resulted in my husbands niece, (age 12) being here at supper time. Just happened to be the night we were having sausage and french toast. She was hungry and ready to eat, but when she saw her plate, a disappointed look was on her face and she asked if we were poor and this was all we had!! My husband assured her we like to eat breakfast foods for dinner often and apparently she wasn't really bothered by it as she ate 4 pieces of sausage, 4 slices of french toast, and 3 glasses of orange juice.

Take a biscuit and cut in half. Place in toaster; Cook 1 egg as you and a slice of bacon. Place a slice of cheese on toasted biscuit, the cooked egg and bacon. Cover with other half of biscuit and enjoy

I think I could eat eggs in some form everyday. I love breakfast food but I don't break my fast in the morning. We usually eat OMAD and usually have that meal at noon. I always have thin cut ribeyes or bacon available, sometimes AmyLu's breakfast sausages.
Options for us are -
* Steak & eggs (usually fried)
* Bacon & eggs (fried, scrambled, or cheese omelette w/Mateo's salsa, guacamole, sour cream)
* A side veg. (roasted asparagus, roasted Brussels sprouts, or roasted broccoli)
* Berries, if I have them
No potatoes, but I've discovered a low carb bread that we indulge in for buttered toast and sometimes French toast with KF syrup), but I acknowledge it's a compromise for us.
We have breakfast for lunch 2-3 times a month. Our little grandkids love it when they come over and we have a big breakfast.

Occasionally we'll have eggs, meat and toast. I never include potatoes as a side.

If I was making it, it would be 2 fried eggs over easy, 2 turkey sausage and a few buttermilk biscuits (in the can) with butter
