Breakfast Enchilada Overnight Bake

1 Pound Cooked Steak Strips (I used Jimmy Dean Crumbles)

4 Eggs, Scrambled

12 Ounces Salsa

8-10 Small Flour Tortillas (I used 10)

3 Cups Mexican Blend Shredded Cheese

2 Cups Cooked Rice

1 Can Corn, Drained

In a medium bowl mix together rice and corn. Place mixture in the bottom of a 9x13 inch pan that has been sprayed with non-stick cooking spray.  Pour half of your salsa over the rice mixture.

Next, place a small scoop of meat and scrambled egg into a tortilla.  Top with 1/4 cup of shredded cheese.  Roll the tortilla by folding over once, then fold in the ends and continue rolling.

Place on top of the rice, corn & salsa.  Assemble remaining tortillas.

Top with the remaining salsa.  Cover with aluminum foil and refrigerate overnight.  The next day, pre-heat oven to 350 degrees.  Bake covered for about 20 minutes, remove foil, top with remaining cheese.  Bake an additional 10 minutes or until cheese has melted.

It sounds like a breakfast burrito.  Simple enough and everyone likes them.  Thanks.

This looks so good! Thank you for sharing!

I was wondering - could corn tortillas be used in place of the flour tortillas? I made an enchilada casserole one time with flour tortillas, and they were a little bit "gummy?"  Could have been me? :/

Thanks!
