A different idea for using canned, fresh or frozen corn..........
BOSTON-STYLE BAKED CORN--6 to 8 servings
1 teaspoon dry mustard
1/2 teaspoon salt (can reduce this amount or skip altogether)
2 tablespoons brown sugar
1 cup ketchup
1 small onion, diced
2-3 slices of uncooked bacon, diced
2 cans whole kernel corn, drained (or about the same amount fresh or frozen)
Preheat oven to 350 degrees. Combine mustard, salt, sugar and ketchup in medium bowl.
Add onion and corn. Mix thoroughly.
Pour into greased 1-1/2-quart casserole and top with bacon.
Bake 40 minutes or until bacon is cooked.

Corn is one of the few veggies DH will eat. I’m always looking for recipes to change it up. Thanks for posting.

Yes, we had this last week after forgetting about the dish for quite a while. Came across it in my recipe collection and decided it was time to resurrect it. Found it years ago in a community cookbook put together by some organization in rural Tennessee.
In case no one has noticed, this is just a corn-based version of Boston baked beans. A shortcut to the whole thing would be to use a bottled or home-made barbecue sauce of choice.
Also, tomato paste or tomato sauce could be used for some or all of the ketchup, if preferred.
It's just another recipe idea to "play around with," which is an impulse that I don't seem able to control with just about every recipe ........LOL!

These are NOT health foods, so watch out for your waistline.

Serves 6-8
6 slices bacon
2 tablespoons chopped onion
2 tablespoons butter or margarine
2 tablespoons all-purpose flour
1/2 teaspoon salt
1 cup sour cream
2 (12 oz.) cans whole kernel corn, drained
1 tablespoon chopped parsley
Fry bacon, drain and crumble. Set aside.
Saute onion in butter, blend in flour and salt.
Gradually add sour cream, stirring mixture until smooth.
Heat just to boiling. Add corn and heat thoroughly.
Fold in half of bacon.
Spoon into greased 2-quart casserole, top with parsley and remaining bacon.
Bake 350 degrees for 30-45 minutes.

CORN & SAUSAGE CASSEROLE
1/2 pound of ground hot or mild pork sausage, browned and drained
2 eggs, beaten
1 stick of butter, melted
1 box corn muffin mix (such as Jiffy brand)
1 can creamed corn
1 can yellow sweet corn,drained
1 cup sour cream
Whisk in the sour cream and butter with the eggs.
Stir in remaining ingredients and pour into lightly greased casserole.
Bake 350 degrees for 50 minutes to an hour.
Can be topped with some grated cheddar if desired. Chopped cooked onion can be added for a more savory flavor.

@novamc1 Thanks, these 2 look delicious too. I have been replacing sour cream with greek yogurt. It should work in these recipes.
