I know that not everyone likes arugula, but I do, and I always put it on my egg salad sandwiches rather than lettuce.  Also, I prefer my egg salad sandwiches on a firm whole grain bread or a good sourdough.

 

However, I am also going to try some of the interesting suggestions here.

Fresh or dried dill. Dukes mayo ( as it has a tang). Yellow mustard. Onion powder. A splash ( teaspoon at most) of Apple Cider Vinegar if Im using Hellman's Mayo

Here in Pennsylvania, the Amish and PA Dutch people serve egg and olive salad sandwiches.  It is very popular in small diners and rural restaurants.

 

It's always on the menu...and I agree with you, it's delicious.

For awhile I have been putting lemon pepper, from a jar, in the spice section, in my tuna and eggs salad.  I like it.
