Love all your threads and posts in Recipes columns, so, I know, this is a dumb question, but does anyone know why all the roasts have become boneless, as in pot roast, chuck etc. I like the bones in my chuck, gave it more flavor and it couldn;t have made it cost too much more. I notice all the stores around here are doing it. Don't like it. Anyway the prices here last week were $4.99 a pound, Maybe that is why???

My theory is that because proteins have becomes so expensive, that people don't want to pay for a bone as most don't use them anymore.

Since I have heard about all the meat they glue together now & sell as one thing when it's actually something else I prefer bone in. At least if it has bones in it it most likely does not contain the glue. My dad said he has ate filet mignon at Outback that was glued together & not a real filet mignon. Bone in means more flavor. The roasts around here still have bone in them. When they cut the bone off a prime rib they always tie it back on. Your grocery store is not going to cut the bones off & take that loss. They will pass that cost onto consumers.

Our chuck roasts here in Southern Ca still have bones...you can get an "o" bone or a "seven" bone chuck roast, certainly cross rib and eye of round are usually boneless, but I always see bone in chuck....

Philistines!  Even a shlub like me knows how important the bone is for flavor . . . however the less experienced me was angry that I had to pay for said bone . . . Smiley Wink

I liked all these replies, thank you all very much for your opinions. I agree that a seven bone roast should be just that, try finding one in Idaho where I live, at a store   I have checked Smith's,, Albertson's, now I haven't checked Sam's, will do that.  I also believe a bone gives you much more flavor, and I also like a little fat for flavor, and I enjoy little pieces with the meat when I eat it.

We don't have a lot to choose from.

. Now the gluing together is something I have never heard of and it makes me nauseaus to think of it. ,,' And the filet mgnon glued together at Outback, I think I would have sent it back.

Outback is probably using the small ends of the filet and putting it together, leaving the larger end and the single cuts for pricier restaurants.

I love 7-bone roasts.  This is our second year raising ou own beef and I will make sure I get as many as possible.  I wasn't real knowledgable last year but I'm learning.  I told my husband the cuts I wanted and the rest we can donate.

My dad did sent the filet back. He told the waiter it was not a true filet mignon.  I heard about the gluing of meat quite a while back. It's disgusting. Search meat glue online & read about it. There are also videos on YouTube.

Glad he sent it back, I would have too, but don't you hate going out for what should be a good meal and then have to send your s food back, and usually everyone else has theirs and you have to wait. A good way to ruin it all.

 

Well, since I honestly wasnot aware of meat glue and you told me about You Tube, and wouldn't you know, the video was on takiing strew meat and gluing it together. Put it in plastic wrap for six hours in the frig, then cut it into fake filet mignon!!!  I am aghast and will look up a lot of places, fast foods, etc.  that do this too.
