Blueberry Crunch Cookies

1 cup melted butter
2 cups sugar
2 tsp. vanilla
1/2 tsp. salt
1 1/2 tsp. baking soda
2 large eggs, beaten
2 1/2 cups flour, packed
1 cup dried sweetened blueberries (You can use other dried fruit, cut into
blueberry sized pieces)
2 cups ground dry oatmeal (measure before grinding)

Add the sugar to the melted butter; mix thoroughly.

Add the vanilla, salt, and baking soda.

Stir in the eggs, then add the flour in 1/2 cup increments, stirring after each addition.

Mix in the dried berries.

Add the ground oatmeal to the bowl and mix in thoroughly; dough will be stiff.

Roll walnut-sized balls and place onto greased cookie sheet. (If dough is too stick to roll, place it in the refrigerator for 30 minutes.) Flatten slightly.

Bake at 350 for 10-12 minutes, until golden brown on top. Cool on cookie sheet for 2 minutes, then remove to wire rack to cool completely.

Makes 6-7 dozen cookies.
