Hi ladies! I just wanted to say thanks to the wonderful ladies here and the recipes I have tried from this site.

As a way of thanks I would like to offer one of our favorite summer time recipes.

Blueberry Amaretto Squares

1 1/2 c. graham cracker crumbs

1/2 c. sugar

1/2 c. butter, melted

3/4 c. sugar

8 oz. pkg cream cheese, softened

2 1/2 c. milk

2 (2 3/4 oz) pkg. vanilla instant pudding

1/2 c. amaretto

1 1/4 c. sugar

1/4 c. cornstarch

5 c. frozen blueberries, thawed

8 oz carton frozen whipped topping (Cool Whip)

Combine first 3 ingredients; press into a greased 13x9 baking dish.

Combine eggs, 3/4 c. sugar, and cream cheese; beat at med. speed of electric mixer until smooth. Spread mixtrue over graham cracker crumbs. Bake at 350 for 30 mins. Cool.

Combine milk, pudding mix, and 1/4 c. amaretto; beat 2 mins at low speed of electric mixer. Spread over cream cheese layer.

Combine 1 1/4 c. sugar and cornstarch in large saucepan; gradually add 1/4 c. amaretto, stirring til smooth. Stir in blueberries. Cook over med. heat, stirring constantly, until thickened; cool.

Pour blueberry mixture over pudding mixture. Chill thoroughly. To serve, spread whipped topping over blueberries.
