Black - Eyed Peas And Rice

1 pound dried black-eyed peas

water

3/4 pound bacon...chopped and LIGHTLY browned

3/4 small onion...finely chopped

1 (14 1/2 ounce) can tomatoes...chopped

1 green pepper...finely chopped

1 cup UNcooked white rice

salt and pepper to taste

Soak black-eyed peas overnight in 6 cups of water. Drain, rinse and then discard any stones or shriveled up peas. Place peas in a 3 quart saucepan with 5 cups of water. Bring to a boil over medium-high heat and simmer for 30 minutes or til tender. Add remaining ingredients and simmer 20-25 minutes or til rice is tender.
