Birthday Bites

Yield: 25 cookies, depending on how large you make them

/><br/> <br/> Birthday Bites<br/> <br/> Ingredients<br/> Chocolate Cake Mix Cookies:<br/> 1 box devil's food cake mix (I like pillsbury)<br/> 2 eggs<br/> 1/3 C. oil<br/> Cake Batter Frosting:<br/> 2/3 C. butter, softened<br/> 1/3 C. yellow cake mix (dry)<br/> 1 tsp. vanilla extract<br/> 1 Tbsp. milk<br/> 2-3 C. powdered sugar<br/> yellow food dye, optional<br/> <br/> Chocolate Ganache:<br/> 3/4 C. chocolate chips<br/> 1/3 C. plus 2 Tbsp. heavy whipping cream<br/> Sprinkles and Maraschino cherries for decoration<br/> <br/> Directions<br/> 1. Preheat oven to 350 degrees and line pans with parchment paper.<br/> 2. Sift cake mix into a large bowl.<br/> 3. Add eggs and oil. Mix until combined, batter will be stiff.<br/> 4. Make walnut sized dough balls and place on cookie sheets. Gently press down on each dough ball just a little to make sure the cookie bakes 5. Bake for 6-8 minutes depending on how fudgey or cakey you want the cookies to be.
6. Cake Batter Frosting: Beat butter and cake mix until smooth. Add vanilla extract, milk and slowly add in powdered sugar until you reach your desired consistency. Add a few drops of yellow dye if desired.
7, Chocolate Ganache: Heat chocolate chips and cream together and stir until smooth. (Heat on the stove top over low heat or in the microwave!)
8. To assemble, frost cookies (I used a large circle piping tip and used a spoon to make a little "well" to hold the ganche). Spoon in ganache, then top with sprinkles and cherries!
