I have had this recipe for awhile and think I found it in a Taste of Home magazine.  I am not sure why it is called Lasagna Soup as ingredients are not like lasagna.  But, it is good. Adjust seasonings to your taste.

 

Best Lasagna Soup

 

1 lb. lean ground beef

1 large green pepper, chopped

1 medium onion, chopped

2 garlic cloves, minced

2 cans (14 1/2 oz.) diced tomatoes, undrained

2 cans (14 1/2 oz.) reduced-sodium beef broth

1 can (8 oz.) tomato sauce

1 cup frozen corn

1/4 cup tomato paste

2 tsp. Italian seasoning

1/4 tsp. Pepper

2 1/2 cups uncooked spiral pasta

1/2 cup shredded Parmesan cheese

 

Cook beef, green pepper and onion over medium heat until meat is no longer pink.   Add garlic; cook 1 minute longer. Drain.

Stir in tomatoes, broth, tomato sauce, corn, tomato paste,Italian seasoning and pepper.  Bring to a boil.  Stir in pasta.  Return to a boil.  Reduce heat; simmer, covered, 10-12 minutes.  Sprinkle with Parmesan cheese before serving, if desired.

I make something very similar.  Instead of the spiral pasta, you can break up lasagna noodles which is what I do.  It is a staple in our home.  I use 4 lasagna noodles, put them in a ziplock bag, and break into small pieces with a kitchen mallet.  We also add some mozzarella cheese when serving.  Delish!

Would love to give this a try.  I have everything on hand except I would need to pick up a green pepper.

I use mafalda pasta..it is like tiny little lasagna noodles...

This reminds me of the stuffed green pepper soup I made a couple weeks ago.  Just used exactly what I would put in stuffed peppers, ground beef, onions, rice, etc. , mixed in half a plastic jar of Campbells's tomato juice.  Go light on the salt, that brand of tomato juice is very good but has a bunch of salt.  I'm trying yours next.

Thanks so much for your replies.  I like the ideas and variations...good idea to use different type pasta.   With colder weather moving in, soup any way will be good!!  Enjoy!
