I needed something quick and easy for a friend's son's birthday, so I came up with these; I was surprised at the rave reviews I got, since I just threw them together!

/></p> <p> </p> <p>Ingredients: </p> <p>1 box blue raspberry cake mix, plus eggs and oil as called for on the box</p> <p>milk to replace the water called for in the cake mix</p> <p>1 tsp. LorAnn Bakery Emulsion</p> <p>1 bag blue raspberry flavored marshamallows</p> <p>1 container Cool Whip vanilla frosting (This is NOT regular Cool Whip - it's frosting and is right next to the Cool Whip)</p> <p>Decorations as desired.</p> <p> </p> <p>Directions:</p> <p>Sift the cake mix, then proceed according to the instructions on the box, except substitute an equal amount of milk for the water and add the LorAnn emulsion. (You can substitute vanilla extract in a pinch.) </p> <p>As soon as you remove the cupcake pans from the oven, place them on a rack and immediately cut a 1/2

When the cupcakes are totally cool, frost and decorate. That's it! {#emotions_dlg.thumbup}

Interesting - but I've never seen blue raspberry cake mix OR marshmallows - where do you find them????

Walmart - the cake mix is Betty Crocker, and they had a display of all kinds of marshmallows right near them. The frosting is next to the regular Cool Whip. (The chocolate one is to die for - tastes like chocolate mousse!) They do have a blue raspberry frosting in a can, but I don't use canned frosting.

I'm thinking the key lime cake mix with key lime marshmallows.... {#emotions_dlg.thumbup1}
