Beef In Potato Shells

3 large potatoes

1 tablespoon butter...melted

1 pound ground beef

1 8 ounce jar pizza sauce

1 package dry taco seasoning

3/4 cup cheddar cheese...grated

1/3 cup sour cream

Prepare whole potatoes for baking. Bake at 400* for 1 hour. Cut each potato lengthwise in halves. Scoop out the potato leaving 1/4 inch shell. (Save the potato pulp to make mashed potatoes or potato pancakes). Brush outsides and insides of the shells with the melted butter. Place the shells cut side up, on a ungreased baking sheet. Bake at 400* uncovered, til edges are crisp and brown...15-20 minutes. Meanwhile, brown beef, drain. Add pizza sauce and taco seasoning and mix well. Spoon beef mixture into shells. Sprinkle tops with cheese. Heat just til cheese is melted. Immediately before serving, top with sour cream.
