Beef Cantonese

 

3 pounds round steak...cut in small cubes

1/4 cup onion...minced
4 Tablespoons butter

2/3 cup soy sauce

1 teaspoon ginger

2 cans  (11 ounce) mandarin oranges....drain save juice

4 cups sliced celery

1 green pepper...cut into strips

2 cans (2 ounce) water chestnuts...sliced

3 cups beef broth

4 Tablespoons cornstarch

1/2 cup water

hot cooked rice

 

Brown beef and onion in butter. Add beef broth, soy sauce, ginger and juice from oranges. Bring to boil. Simmer 1 1/2 hours til meat is done and tender. Add celery, water chestnuts and green pepper. Simmer for about 10 minutes. Mix cornstarch and water together. Add to mixture. Stir til thickened. Boil for at least one minute. Add drained oranges and serve with hot cooked rice.

@LilBitMissty  This would be an excellent recipe for all those shiny new pressure cookers.  I'd cut it in half though as it makes too much for a family of one.  Cook it about 25' in PC.  Round steak would be so tender.

Kachina624...Good idea about the pressure cooker. LOL but with me I am scared to death of them. I can remember back as a child my DM had one of the old kinds with the rattling knob on the lid. I remember it blew the lid off. Man that scared me,,,so much I never used one. I am sure they are much safer now tho. Thank you so much for your kind words about my recipes! Hi!

 

I am going to make it this week! I found beef in the freezer yesty that NEEDS to be used ASAP!

 

I forgot to buy water chestnuts though....rats!  LOL  By time that meat thaws...I should be able to get to a grocery store.

Respectlife...Hi sweetie.  I know how that is. LOL sometimes I go shopping for ingredients to make a certain dish, and I'll be darned if  I don't forget one of the most important igrredients. And I use a grocery list!!!!   Woman LOL  Go figure...right????LOL. Let me know how it turns out.Woman Wink
