An easy and quick meal for those busy nights!

Bean Burrito Bake

1 lb ground beef

1 (16 oz can refried beans) I use fat free

1 cup Bisquick

1/4 cup water

1 avocado, sliced (if desired)

1 cup salsa

1-1/2 cups shredded Sharp Cheddar cheese

Sour cream

Directions

Preheat oven to 400. Grease 10 x 1-1/2 inch pie plate. Brown ground beef and drain well. Add seasonings. (SEE BELOW) Mix beans, baking mix, and water. Spread mixture in bottom and halfway up side of pie plate. Layer with beef, avocado, and salsa.

Bake 20-30 minutes or until knife inserted in center comes out clean.

Sprinkle with cheese and bake 2-3 minutes longer. Serve with sour cream.

NOTE: This recipe didn't call for any seasonings in the ground beef. After making it, I felt like it needed something to spice it up a bit. I season it with a package of Lawry's Burrito seasoning mix or make my own blend.
