Basic Healthy Salad - Some suggestions

I like to eat a small salad with my dinner each day.  I usually just have the basic things --- bell peppers, carrots, tomatoes (if they are in season), cucumbers, some type of greenery.  I am bored!!!!!

 

What other things could I add which are easy and healthy - low in calories and cholesterol, etc.???

 

I know hardboiled eggs are good in salad but I try not to eat many eggs - cholesterol -plus the price of eggs right now is awful!

 

Suggestions???

Cauliflower, it adds a nice crunch.

Many of the little grape and cherry tomatoes and mini bell peppers are great.  Sunflower and pumpkin seeds are good.  My favorite greens are spinach and arugula. Try different salad mixes!

 

Apples are good diced, orange slices are good too.  Dried cranberries, blueberries and cherries, feta cheese, taco salad made with ground taco seasoned turkey are good for a complete meal.

I use the organic mixed salad greens (all kinds of greens, including baby spinach), cucumber (when in season), red onion, organic tomatoes (or in the summer from my garden), and I always add some chick peas and some kidney beans.  A little olive oil and balsamic vinegar mixed in with a little dill - Delicious!  If I want it as my main meal then I add some cooked chicken breast to it.

radishes, banana peppers, all kinds of olives, croutons, beets, green onions, carrots.  Tons of stuff in the produce isle.

I hate making lettuce salads.  My most recent one is sort of a Greek Salad.......chopped cucumber, crumbled feta cheese, green bell pepper, red onion, chick peas aka garbanzo beans, with Ken's Greek Salad Dressing.

I like fruit in my salad such as mandarin oranges, blueberries, strawberries or dried cranberries.  In addition to the veggies you mentioned, I also like cauliflower or radishes.

Knowledge is knowing that a tomato is a fruit, but Wisdom is knowing not to put it in a fruit salad.

Add grilled chicken for the protein. Or some other protein. For convenience, I usually get Bell & Evans chicken tenders.

 

A good dressing!

 

For me, a green leaf lettuce screams for Seasons Taproom basil EVOO & a fruit balsamic vinegar.

Iceburg - blue cheese dressing

And yes, a hard boiled egg - Thousand Island - with chick peas & cheese

 

Add some interest with spices & herbs, the superfoods.

off the top of my head:

radishes

cauliflower

sunflower seeds

green peas

olives

celery

If you are bored with salad another option is vegetable soup or roasted vegetables. In winter I would rather have soup than salad. I like to add hot sauce for flavor.
