Doesn't that sound good? Well I made it yesterday and ---against my usual safe guard of only making 1/2 a recipe if it is a new recipe to me ---I DOUBLED the recipe!!!!! With plans on gifting small loaves here and there----well---for whatever reason--it isn't great!!! It looks nice and you can taste the banana and pumpkin, but the texture is off--can't explain it but maybe it is too pancakey-----you know what I mean? It has height to it so it didn't "fall". Anyway, now what to do with it all. Dang it!!!!

Re: Banana pumpkin bread

[ Edited ]

Well if you really don't like it I would toss it.  Why eat something that you don't care for.

It does sound good and I'm not a baker but both banana & pumpkin have strong flavors.  Were they competing with one another?

I'm going to make a pumpkin chip cake with frosting tomorrow for my dd's birthday.  She & her dh are vegan so the cream cheese frosting will be made with vegan ingredients.  I hope it turns out well.  I never made this cake before.

I make bread for my husband to have with his coffee each morning and I made banana pumpkin early this month. It usually is enough for three smaller breads. As far as I know my husband liked it. Perhaps it was the recipe you used. I know my husband would not have eaten it if he didnt like it. The bread that is next in rotation is apple cider

@wagirl   Sorry it didn't turn out to your liking.  Maybe others would appreciate it.

You said you made small loaves?  Can you bring them to folks in the area?  Does your building have a service staff?  Any local stores closeby that you patronize?  It's a shame to throw it away.

I've made a tasty recipe for this bread from the allrecipes site.  I bake it a little longer than written.

If it is just a texture problem, could you cut it into small chunks and add it to pudding?  To ice cream? A blender mix fruit drink?

@haddon9 ---the flavors didn't cancel each other out--you can taste both and are not bad tasting---its just the mouth feel----I think if I thought about it--I would have added nuts and or choc chips

@PinkyPetunia --yes I did make them into small loaves and wanted to gift them to my DD co workers who gave us things from their gardens-- but don't want to get a bad rep for not being a very good cook because I am a very cook/baker and if something doesn't taste good to me, I will not share. Woman Frustrated

@msgb --yes, the recipe was a new one for me and as I stated, I usually only make 1/2 of a new recipe in case it doesn't turn out. Apple cider in anything can't be badWoman Wink

@wagirl

Same, if I don't like it then I won't give it to others.

Made a simple chicken soup recently and used a different Italian seasoning, we just didn't like it.  It has added chili flakes in it, too spicy and/ or just the wrong flavor and we like spice.

Threw out the leftovers no one wanted it.
