Lovely, though, banana walnut is one of my favs for cakey-type stuff.   In fact, I'm in the middle of one of the Grandma's banana walnut - love!  Smiley Happy

I really like banana nut muffins but DH rather have blueberry.

They are so easy to make.

Do you have a favorite recipe for Blueberry?  I have several...but must say...none are my 'favorite'.

 

Oh, btw, I had my second Shingles Shingrex shot Sunday. 

 

This second shot did not ache near as bad as the first, nor for as long.

 

This time I didn't let my arm stiffen (baby it).  I kept moving it even though it was sore.

 

It has only been 3 days this time and it is fine!

That makes sense to keep your arm moving so it won't stiffen up. I remember all us kids laying around after we had shots before we moved to Hawaii. At least it won't be bothering you during the Holidays.

They are working on a universal vaccine using llama antibodies. Just saw this online this morning. They said the vaccine may be a thing of the past & nasal spray works better.

Blueberry Cream Muffins

"Rich and delicious blueberry muffins. The secret is the sour cream."
Ingredients
  • 4 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 1 teaspoon vanilla extract
  • 4 cups all-purpose flour
 
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 cups sour cream
  • 2 cups blueberries
Directions
  1. Preheat oven to 400 degrees F (200 degrees C). Grease 24 muffin cups or line with paper muffin liners.
  2. In large bowl beat eggs, gradually add sugar while beating. Continue beating while slowly pouring in oil. Stir in vanilla. In a separate bowl, stir together flour, salt and baking soda.
  3. Stir dry ingredients into egg mixture alternately with sour cream. Gently fold in blueberries. Scoop batter into prepared muffin cups.
  4. Bake in preheated oven for 20 minutes.

I cut the recipe in half & it made 12 muffins.

I used 1 1/4 c or so of blueberries.

Enjoy!!! It's really yummy. I'm sure I will be making more soon.

We like the small wild blueberries so I buy a large bag of frozen blueberries.

They are good reheated in the air fryer is you have one.

I used Safflower oil when I bake instead of vegetable oil.
