Hello!

 

I felt like using up a ripe banana today but since it's just me and hubby I didn't want to make a whole cake or banana bread.  I had a recipe from my son's former sitter for banana muffins but felt like tweaking it (less sugar, less butter, added blueberries) and it turned out great - hubby approved!  Here it is:

   

Yield:  10 muffins  Oven 350 degrees - 25 minutes

 

No mixer needed

 

Combine:

 

3/4 cup sugar

1 egg

3/4 stick butter 

1 mashed banana and add milk to make one cup.

2 T. applesauce

 

Mix w/above:

 

1 t. baking soda

1 and 1/2 cup flour (minus one tablespoon)

pinch of salt

1 t. vanilla

 

 

Combine until mixed together well.  Put in cupcake tin with liners.  Topped with 5 blueberries each prior to placing in oven.  

 

Bake 25 minutes or until toothpick comes clean.  

 

I froze 5 of them so we wouldn't be tempted to overindulge!

 

Hope you enjoy!  The batter is a little sweet but the blueberries offset it.

If I only had some applesauce I'd be right on this. I do have a diced pear cup whose contents could be mashed but I don't want to ruin the recipe. We also like smaller recipes so we aren't eating the same thing days in a row.

Honestly, I made this up so I really think you could add the pear.  The orginal recipe from my sitter didn't call for applesauce so I cut the butter a little and added the applesauce.  I'm sure pear would work!

These sound delicious. I love blueberries and the banana sounds wonderful.

I have been baking a lot and it goes into the freezer. Since my husband has been working from home he likes a little something with his morning coffee or tea in the morning. These will hit the spot for him.

I just found a cookbook and what I have made from it have been great.

Midwest Made is the name of the book.

Very good!  I fixed these this morning....quick...easy and good.  I actually got 12 muffins out of the recipe....hmmm..too much of something??  Doesn't matter....came out perfect.  Thanks for sharing your recipe.
