I've been on a kick lately of stacking veg in a sandwich along with a little hummus.  Like thin avocado slices, spinach leaves, tomato, etc.  Now I'm thinking it would work with hummus and some of the salad.  Worth a try Smiley Happy


Great suggestion, @Noel7.  My meals tend to be repetitious and I'm always looking for new ideas, and I especially love hummus and avocado.  Thanks!

yummers....and if you don't want to use oil in the dressing, you can substitute it with a tahini sauce (delicious one in trader joe's deli section)  Thanks!

I am also always looking for interesting side dishes to have with my meals, too.

 

This looks very refreshing to have, especially now that we're getting into the warmer months, and this is something that you can just put together without having to cook it! Smiley Happy

Good, and wise, suggestion.

 

I saw 4T of olive oil.

Ouch! That's 500 calories...and 54 grams of fat! 

Avocado, tahini...even a blended bean dressing would be 

better than that much oil which offers no nutritional value.

 

That recipe is nice for those venturing into the plant-based world.
