We love big leafy salads with walnuts and cranberries in it and then top it off with either a scoop of chicken salad or tuna salad.  Of course you can top it with anything you like... strips of tender steak, etc...  easy, cool and healthy!

When it is warm I make a macaroni salad in the morning and have it for dinner with grilled fish, etc.

@software Great suggestion! I am trying to stay away from processed meats...which I believe means no deli meats...I need to look further into that..I love Boar's Head products...
