The box of mix makes 12 muffins.  I have a pan that makes 6!

 

If I bake them in 2 batches, do I need to refrigerate the batter between batches or just let it sit?

@Zhills   Since it's a box mix, I would not bother; however, if you do, bring it back to room temp before baking.  Otherwise, the baking time might be 'off.'

Also, make sure your muffin pan cools to room temp. before baking the second batch.

 

What kind of muffins are you baking?

Orange & Cranberry!  I want to use my Breville toaster oven to make them and it will hold only 6.

I love them also!

If you bake muffins often, you could buy another muffin pan and then as soon as one pan is done you can put the other one in your Breville.   I do that with cookies--always use two cookie sheets so don't have to wait for one to cool.

I like that idea but my Breville oven will not hold a BIG muffin pan!  I did find a mini muffin pan I will use.  Thanks for the suggestion
