Haven't made a cheesecake in a long time, but the recipe I remember liking says to bake for 60-70 minutes....turn off oven leaving door ajar.....and leave cheesecake in oven for one hour......revised version of same recipe doesn't specify that.....anyone follow the "leave in oven" for additional hour? thanks...

I leave mine in for an hour or longer. It always turns out perfect!

Do you mind posting recipe and is either recipe, the one calling for an hour or more, or the one not calling for, baked in a convection oven as opposed to a conventional oven?
I would like the recipe. At a time in my life, I did not need the recipe as I cooked it so often for family, friends, etc., and then a case of diabetes affected a couple family members and I quit making it. Now, I would like to make it for a sister who will be visiting during the holidays and recalls many years ago when I baked it and she loved it. Your recipe will be helpful and might be the one!!!

Here it is...i remember it was on the Nabisco Graham Cracker box during the '80's! And I remember everyone loved it!
Our Best Cheesecake
1 3/4 cups graham cracker crumbs
1/3 cup melted margarine (i use butter)
1 1/4 cups sugar
3 (8 oz) packages cream cheese softened
2 teaspoons vanilla
3 eggs
1 cup sour cream
Pie fillng
Combine crumbs, margarine and 1/4 cup sugar. Press on bottom and 1 1/2 inches up side of 8 or 9-inch springform pan; set aside.
Beat cream cheese, remaining sugar and vanilla until creamy. Beat in eggs, one at a time. Blend in sour cream. Spread in pan.
Bake at 350 for 60-70 minutes or until center is set. Turn off oven. Leaving door slightly ajar, leave cheesecake in oven 1 hour. Remove from oven; cool completely. Chill 4 hours or overnight. Remove side of pan. Top with pie filling if desired.

Can you make this in a regular cake pan or does it need to be a springform pan?
