Baked Vidalia Onion Rings

This recipe was on the Shuman Farms (of Reidsville, GA)   bag of Vidalia Onions that I just bought at Publix.

 

Looks too easy and good to not make as soon as I can  buy the buttermilk.  No frying in messy oil!

Baked Vidalia Onion Rings

 

2 large Vidalia sweet onions

2 cups all-purpose flour

2 cups buttermilk

4 eggs

4 teaspoons salt

1 teaspoon paprika

1 teaspoon dried oregano

1 teaspoon dried basil

3 cups bread crumbs

4 tablespoons olive oil

 

Preheat oven to 450 degrees.

Line baking sheets with parchment paper.

Slice onions into large rings, separating them, set aside.

 

Combine flour, paprika, oregano, basil and salt in small bowl.

In another bowl, whisk together buttermilk and eggs until smooth and thickened.

Place breadcrumbs in a third bowl.

Lightly dredge onion rings in flour mixture and drop in buttermilk mixture.

Let excess batter drip off, then dredge in the breadcrumb mixture.

Arrange rings in single layer on baking sheets.

Drizzle olive oil over rings and place in oven.

Bake until golden brown, 14-20 minutes, flipping each ring once halfway through cooking.

I don't have any Vidalias!

 

Wegman's didn't have that last week and I was quite surprised!!!

 

My Weg is a smaller one though.

I don't think the recipe is  necessarily restricted to using just Vidalia onions. Probably any year-round-available "sweet yellow onion" would work as well.

 

I live in Georgia and yet I didn't start seeing good-looking Vidalias  in stores until the past two weeks.  Give it time..........unless the shortage of truck drivers and other supply chain problems get worse,  Vidalias should be just about everywhere soon.

@novamc1 Thank you for posting the recipe.

 

I will give it a try. I never would have tried to make onion rings if I had to fry them. But baking the onion rings is worth trying.

I just SO prefer vidalias, I'd be willing to wait.

 

Weg has always had them when in season, maybe they are just late getting them up here to the 'north'.

I bet this recipe would be good in the airfryer---we don't get vidalias here in WA state--it's Walla Wallas all the way.Woman Very Happy

@wagirl I think a half recipe baked in my air fryer would work well.

if anyone makes these, please review, for us. It seems like a lot of batter, so i'd have another onion ready. I must be a purist, because basil and oregano, doesn't appeal to me.

 

i could eat a tray of these and a glass of wine and call it dinner!
