I love scalloped tomatoes and corn. They each make such a nice simple side-dish. Thought I would share this recipe with others.
Baked Corn
1 cup cream-style corn
2 tbsp. sugar
1 egg, well beaten
1 cup milk
1 tbsp. melted butter
10 crackers, crushed ( I prefer Ritz but also can use saltine)
1 tbsp. flour
Spray a small baking dish with non-stick spray to prevent corn from sticking.
Mix all and bake, covered with foil, in moderate oven (350 degrees) until top is brown or until knife inserted comes out clean. (Usually about 45-50 minutes).
Variations: This makes a small amount but you can add one can of whole kernel corn, if you wish. Sometimes I sprinkle shredded cheese over the top. You can also crush extra Ritz, combine with some melted butter and sprinkle that over the top and return to oven for a few minutes.
