Baked Beef And Macaroni

4 Tablespoons butter

1/2 cup onion...minced

1 1/2 pounds ground beef

1 cup tomatoes...peeled and chopped

1 1/2 teaspoons salt

pepper to taste

1/4 teaspoon oregano

1/2 cup Parmesan cheese

1 pound small elbow macaroni...cooked and drained

In skillet, melt butter. Addbeef and onions. Cook over high heat stirring constantly for 5 minutes. Mix in the cheese. Test for seasoning (at this point I add a little minced garlic). In a 9x13 inch pan, spread HALF the macaroni. spread the meat mixture over it and top with remaining macaroni.

Cover with the following sauce:

2 Tablespoons butter

2 tablespoons flour

1/2 teaspoon salt

dash of pepper

1 cup milk

1 egg yolk

1/4 cup Parmesan cheese

Melt the butter in a saucepan. Blend in the flour, salt and pepper. GRADUALLY add the milk. Stir steadily to boiling point. Cook over low heat for 5 minutes. In a bowl, beat together the egg yolk and cheese. Add the hot sauce mixture stirring constantly to avoid curdling. Pour over macaroni. Bake 30 minutes at 375*. Let set 5-10 minutes after removing from the oven.
