My mother often made baked apples this way!

Baked Apples in Tapioca

3 T quick-cooking tapioca

2/3 cup sugar

2-1/2 cups water

Cook together 5-7 minutes, until thick

3 T butter

dash of cinnamon

Add to the above mixture until butter melts

Peel and core 4-6 baking apples, leaving apples whole.

Place in a shallow greased baking dish. Stuff cored apples with raisins, dates, or nuts.

Pour tapioca mixture over apples.

Bake @ 350 for 45-60 minutes, until apples are tender when pierced with a fork.

***Baste apples every 20 minutes with tapioca mixture.

Serve warm!
