Not sure where I got this recipe..I have a note on it saying: Tried it once..good
Bailey Cheesecake Squares
1-1/2 cups of chocolate graham cracker crumbs
4 tablespoons of butter, melted
8 ounces of cream cheese
2 eggs
1/2 cup of sugar
1/2 cup of semi-sweet chocolate chips, melted
2 tablespoons of Baileys Irish Cream
Heat oven to 350 degrees.
In an 8x8 baking dish, combine the cracker crumbs and butter. Press firmly down.
Bake for 10 minutes and then cool on rack for 5-10 minutes.
In a bowl, beat the cream cheese, eggs, and sugar until blended. Divide and pour half into another bowl.
Add the melted chocolate to the first bowl.
Add the Baileys to the second bowl.
Pour the contents of the first bowl onto one side of the crust. Pour the contents of the second bowl onto the other side. Use a fork to swirl the two sides together.
Bake for 35 minutes or until the center is set.
Remove from the oven, cool, and then chill for a least an hour before attempting to cut into squares.
