I found and tried this recipe from Pinterest that was really good and easy. Its from ===she wears many hats===

16oz elbow pasta, or any shape you like

3/4 cup mayo--full fat or any of the other types

1/4 cup sour cream--same as with mayo

3 T rice vinegar--or whatever type you have

1 t garlic powder

1 t salt

1 1/2 t black pepper

8 slices of bacon, cooked and crumbled

1 cup seeded and diced toms--I use grape toms

1 cup roughly chopped baby spinach

Cook pasta according to directions, and drain. Mix the remaining ingredients together and add pasta. Cover and refrigerate until ready to serve.

I would make extra sauce but that is just me. Warm pasta tends to soak up the sauce. I took this to Easter dinner and came home with an empty container. Also I used only half the amount of salt as the bacon is salty.

I always have these ingredients on hand. I'm going to give it a try sometime. Thanks for sharing the recipe.

I've had this but without the spinach-delicious. I'll have to try with the spinach.

I know---I did use veggie pasta and leaner than normal bacon well-blotted, but opted for the full fat sour cream and mayo---bad, bad bad----but so good, good, good !!! Will try using light or non-fat condiments next time----big sigh{#emotions_dlg.unsure} !!!
