SERVES SIX: 3 - slices turkey bacon; 2 - pt. quartered cherry tomatoes; 4 - oz. diced mozzarella cheese; 3 - T. sherry wine vinegar; 2 - T. evvo; 1 - finely chopped garlic clove; 3/4 pound - rigatoni or chiocciole; 1/2 C. basil leaves (small). COOK turkey bacon in frypan on Med. until crispy. Break into small pieces. COMBINE cheese, garlic, tomatoes, oil & vinegar in large bowl. COOK pasta. Drain & add to bowl with 1/2 of the basil. TOSS well. TOP with remaining basil & turkey bacon. Delicious!
