This is a great cold dip for summer and so easy! I may whip one up this weekend.

1 lb. bacon

1 cup mayonnaise

3/4 cup sour cream

1 medium tomato, chopped and seeded

Directions:

Cook bacon until crisp. Drain grease on paper towels, crumble and set aside to cool

Combine mayonnaise and sour cream. Add crumbled bacon and chopped tomato, and refrigerate for about 2 hours before serving to blend flavors.

I have also added 1/2 cup of finely shredded cheddar cheese.

Serve with crackers, or you can serve with toasted white or sour dough bread cut into quarters.
