I am not a fan of banana bread - in fact I do not have much of a sweet tooth but I will not eat a banana with brown spots on it so occasionally I make these.
1/2 cup mashed ripe banana
1/2 cup 2% milk
1 Jiffy corn muffin mix
Preheat oven to 350.
Combine banana, milk and mix in a medium bowl. Stir until just moist. Spoon batter into 6 muffin cups that have either been greased or with muffin papers. Batter with be thin. Bake for 22 minutes or until wooden pick inserted comes out clean. Cool in pan 10 minutes.
Over the years I have added a few currants, etc. You can just use your imagination.
