BANANA CAKE WITH COCONUT TOPPING

Found this in a community cookbook. The crunchy topping makes this.


CAKE
1-1/2 cups sugar
1/2 cup butter softened
2 eggs
2-1/4 cups flour
3/4 t baking soda
1/2 t baking powder
1/2 t salt
1/4 cup sour cream or Greek yogurt
1 t vanilla extract
3 very ripe medium bananas, mashed

TOPPING
1/2 cup butter melted
3/4 cup brown sugar
1 cup chopped pecans
1-1/2 cups sweetened coconut
3-5 T half and half

Preheat oven 375. Grease and flour 9 x 13 inch pan.

Mix cream, sugar and butter until fluffy. Add the eggs and beat well.

Sift together the flour, baking soda, baking powder, and salt. Gradually beat into the creamed mixture alternating with sour cream. Stir in vanilla and bananas. Mix until just combined. Pour batter into pan and bake for 30-35 minutes. Cool cake.

For the topping, turn oven to broil and place rack just above center. Beat together the melted butter and brown sugar. Stir in pecans, coconut and enough half and half to get creamy consistency. Spread topping over the cooled cake and under the broiler until bubbly, 5-10 minutes.

Make sure you cool the cake before putting the topping on and do not put too close to broiler.
