These provide a different sweet balance to pork or black beans.

4 ripe bananas, peeled, cut crosswise then halved lengthwise
4 T unsalted butter
2 T dry sherry
1 T fresh lime juice
1/3 cup loosely packed brown sugar
1 t ground cinnamon

Preheat oven 375F

Arrange bananas in a 11 x 9 glass baking pan. Melt butter in small pan over medium heat. Stir in the sherry and lime juice. Heat thoroughly then pour over the bananas. Sprinkle with brown sugar and cinnamon. Bake in the oven until lightly browned and bubbly - 12 to 15 minutes.
