I took dinner to a friend who had a recent fall and trouble getting around. Decided on this quiche and a salad.

6 slices of thick bacon
4 eggs
1 cup whole milk
4 dashes of Tabasco
1-1/2 cups shredded cheese (I used Gruyere)
2 cloves minced garlic
1/2 onion diced
8 ounces of sliced mushrooms (I used baby bellas)
1 pie crust

Cut bacon into 1/4 inch stripes and fry on low until crispy. Transfer bacon onto paper towel. Reserve grease in small bowl.

Saute onions and garlic in 2 T bacon grease for about 1 minute on low. Add sliced mushrooms and saute for another 8 minutes. Set aside to cool.

Place pie crust in a 9 inch pan and set aside.

Whisk together eggs, milk, Tabasco and cheese in large bowl.

Mix cooled bacon and mushroom mixture into egg mixture. Ladle into pie crust. Bake in 350 degree oven for an hour or until eggs are set. Check crust after 30 minutes and cover with foil if getting too brown.

This recipe also called for 1/2 t Creole seasoning which I did not have and did not want to purchase. It was delicious without.
