Simmered Asian Chicken

4 boneless, skinless chicken breasts

1 tablespoon oil

1/3 cup soy sauce

1/3 cup brown sugar

1/2 cup water

1 tablespoon catsup

1/4 cup apple juice

1/4 teaspoon red pepper (optional)... I don't use it

2 tablespoons cornstarch

1 tablespoon water

2 teaspoons sesame seeds

1//2 onion...sliced

1 clove garlic..finely minced

pepper to taste

cooked rice

Heat oil. Brown chicken. Mix soy sauce, sugar, water, catsup, apple juice garlic and pepper. Pour over chicken. Cover and simmer 35-45 minutes. Remove from heat. Skim off fat. Blend cornstarch with 1 tablespoon water. Add to sauce to thicken. Sprinkle with sesame seeds. Serve over cooked rice.
